Tsambica’s Cous Cous Recipe


  • 1 ½ cups couscous
  • 1 ½ cups chicken stock
  • 2 tbsp olive oil
  • 60 gr butter chopped
  • 2 large brown onions chopped
  • 6 dried figs chopped
  • 1 cup roasted almonds
  • 1 cup parsley finely chopped
  • ½ cup coriander finely chopped
  • Salt and pepper to taste


  1. Place couscous in a large bowl, bring stock to the boil in a small pan, remove from heat, pour over the couscous and stand for 10 minutes. Use a fork to separate grains
  2. Heat butter and oil in a large frying pan over medium heat add onion and cook stirring until softened
  3. Stir onion mixture and remaining ingredients into couscous mixture until well combined
  4. Season with salt and pepper
