Choose clean, smooth, well shaped sweet potatoes (avoid bruised, cracked or soft product). Store them in a cool, dark, well ventilated place.
Roast, boil and mash. It’s easy to whip up some oven roasted chips. Simply peel and slice sweet potatoes, brush with a little oil, sprinkle with a little salt and pepper and oven roast at 200-210°C until lightly browned and cooked through, 15-20 minutes (depending on size and thickness of chips).
Sweet potatoes are an excellent source of complex carbohydrate, fibre and potassium and are a good source of vitamin E. Orange sweet potatoes are an excellent source of vitamin beta carotene.
