Ingredients

  • 400g fresh Brussels sprouts
  • 4 garlic cloves, finely chopped or crushed
  • 1 whole orange, zested and juiced
  • ½ lemon, juiced
  • 3 tablespoons premium extra virgin olive oil
  • 2 tablespoons hot honey, plus extra to finish if desired
  • A generous pinch of salt
  • ¼ cup flaked almonds, lightly toasted
  • ⅓ cup finely grated Grana Padano or Parmesan-style cheese

Method

1. Prepare the Brussels sprouts

Preheat your air fryer to 190°C.

Wash the Brussels sprouts, trim the ends and remove any damaged outer leaves. Cut each sprout in half so the flat edges can become beautifully golden and crisp.

2. Add the flavour

Place the Brussels sprouts in a large bowl. Add the garlic, orange zest, , olive oil, hot honey and salt.

Toss everything together until the Brussels sprouts are thoroughly coated.

3. Air fry until crispy

Transfer the Brussels sprouts to the air fryer basket. Avoid overcrowding the basket, cooking in batches if necessary.

Air fry at 190°C for approximately 20 minutes, shaking the basket every 5 minutes to help the Brussels sprouts cook evenly and become crispy on all sides.

They are ready when the centres are tender and the outer leaves are deeply golden and caramelised. Air fryers can vary, so keep an eye on them during the final 5 minutes.

4. Add the finishing touches

Transfer the cooked Brussels sprouts to a serving bowl. Finish with the toasted flaked almonds, a generous grating of Grana Padano and orange and lemon juice.

For additional sweetness and heat, add one final drizzle of hot honey just before serving.

Tom’s Tips for Perfect Air Fryer Brussels Sprouts

  • Cut the sprouts into similar-sized halves so they cook evenly.
  • Place the cut sides against the base of the basket for additional caramelisation.
  • Give the Brussels sprouts enough room to crisp rather than steam.
  • Keep an eye on the garlic and honey towards the end, as both can caramelise quickly.
  • Toasting the almonds first gives the finished dish extra crunch and a richer flavour.
  • Serve immediately while the outer leaves are still wonderfully crisp.
