Why We Love This Roasted Tomato Soup Recipe
There’s something about tomato season that calls for slower cooking, warm kitchens and simple ingredients done well. When tomatoes are at their best, you don’t need much to turn them into something special — just a little time in the oven, good olive oil, garlic and fresh herbs.
This roasted tomato soup is rich, comforting and full of flavour, made with sweet Roma tomatoes, roasted garlic and a touch of parmesan for depth. Roasting the vegetables first brings out their natural sweetness and creates that deep, slow-cooked flavour that makes homemade soup feel a little extra special.
We’ve added a small amount of roasted capsicum and carrot to balance the acidity naturally, without overpowering the tomatoes. Finished with fresh basil, parmesan and warm bread on the side, it’s the kind of recipe made for cooler evenings and sharing around the table.
Ingredients
- 1.5–2kg Roma tomatoes
- ½ red capsicum
- 1 brown onion
- 1 carrot
- 1 whole bulb garlic
- Olive oil
- Fresh thyme
- Salt and pepper
- Small pinch chilli flakes (optional)
- 1–1.5 cups chicken bone broth or stock
- Fresh basil
- Freshly grated parmesan

Method
- Preheat oven to 200°C.
- Slice the tomatoes, capsicum and onion. Cut the top off the garlic bulb and place everything onto a roasting tray with the carrot.
- Drizzle generously with olive oil and season with thyme, salt, pepper and a small pinch of chilli flakes if using.
- Roast for 40–50 minutes until the vegetables are soft, caramelised and slightly charred around the edges.
- Squeeze the roasted garlic from the bulb and transfer everything to a pot or blender.
- Add bone broth or stock and blend until smooth and silky.
- Simmer gently for 5–10 minutes if needed and adjust seasoning to taste.
- Serve topped with fresh basil, parmesan and a drizzle of olive oil.
